  • 2 lbs ripe tomatoes, halved
  • 1 cup fresh basil leaves
  • 1 medium sweet onion, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place halved tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until caramelized.
  2. In a large pot over medium heat, sauté chopped onion in olive oil until translucent. Add minced garlic and cook for another minute.
  3. Add roasted tomatoes to the pot along with their juices and vegetable broth. Simmer for 15 minutes.
  4. Blend the mixture until smooth using an immersion blender or standing blender.
  5. Return to low heat, stir in heavy cream, and add fresh basil just before serving.
