  • ½ cup granulated sugar
  • 16 oz cream cheese, softened
  • 3 large eggs
  • 1 cup sour cream (full-fat)
  • 1 tsp ground cinnamon
  • ⅓ cup brown sugar (light)
  • 1 cup all-purpose flour
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar until mixed. Press into the bottom of a springform pan.
  3. Beat softened cream cheese in a separate bowl until smooth. Gradually add sugar and mix in eggs one at a time until fluffy.
  4. Stir in sour cream and cinnamon until smooth. Pour over the crust in the springform pan.
  5. For the topping, mix brown sugar, flour, cinnamon, and melted butter in another bowl until crumbly; sprinkle over cheesecake layer.
  6. Bake for 50-60 minutes until set but slightly jiggly in the center.
  7. Cool at room temperature before refrigerating for at least four hours or overnight.
  8. Dust with powdered sugar before serving.
