  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 1 cup strong brewed coffee (cooled)
  • 1 cup mascarpone cheese (full-fat)
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder (unsweetened)
  • Chocolate shavings (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two round 9-inch cake pans.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat eggs with melted butter and cooled coffee until smooth.
  4. Gradually mix dry ingredients into the wet until just combined. Pour batter into prepared pans.
  5. Bake for 25–30 minutes or until a toothpick comes out clean. Cool briefly in pans before transferring to wire racks.
  6. For the coffee cream, mix mascarpone cheese with sugar and vanilla extract. Whip heavy cream to stiff peaks and fold into the mascarpone mixture.
  7. Once cakes are cool, layer one on a serving plate, spread half of the coffee cream on top, sprinkle with cocoa powder if desired, and repeat with the second layer.
  8. Chill for at least two hours before serving and garnish with chocolate shavings if desired.
