  • 4 medium-sized Russet or Yukon Gold potatoes
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary or thyme, chopped
  • ½ cup shredded cheddar or parmesan cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Rinse and scrub potatoes; pat dry.
  3. Carefully slice each potato crosswise into thin slices without cutting through.
  4. Melt butter in a saucepan over low heat; stir in garlic and herbs for about 3 minutes.
  5. Brush the butter mixture over each potato slice; season with salt and pepper.
  6. Place on a parchment-lined baking sheet and bake for 45-50 minutes until crispy outside and tender inside.
  7. If desired, add cheese during the last 10 minutes of baking.
