  • 9 lasagna noodles (no-boil)
  • 1 lb fresh shrimp, peeled and deveined
  • 1 cup ricotta cheese (whole milk recommended)
  • 2 cups shredded mozzarella cheese (whole milk preferred)
  • 1/2 cup freshly grated Parmesan cheese
  • 4 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with nonstick spray.
  2. Melt 1 tbsp of butter in a skillet over medium heat. Season shrimp with salt and pepper, cooking until pink (about 3 minutes). Set aside.
  3. In the same skillet, melt remaining butter (3 tbsp), whisk in flour to create a roux. Gradually add milk while stirring continuously until thickened (about 5 minutes). Season with garlic powder and salt.
  4. Spread some white sauce in the baking dish, layer noodles, half the shrimp, half the ricotta, and one-third of mozzarella and Parmesan. Repeat layers ending with noodles topped with remaining sauce and cheese.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until golden brown.
  6. Let rest before serving; garnish with extra white sauce or herbs if desired.
